Coconut Kale Salad

1/3 cup coconut oil

2 cloves garlic, minced

1 tsp chili oil

3 ½ cup packed kale, rib removed

½ cup unsweetened coconut flakes

1 ½ cups quinoa, cooked

Heat chili oil, coconut oil and garlic in a skillet heated to medium high heat. Add kale and season with ½ tsp salt; add the quinoa. Toss all the ingredients to coat with chili coconut oil mixture; sprinkle coconut flakes, remove from heat and toss. Serve hot or cold.
