This week has been a really good one; as all my hard work is, finally, paying off! But with small success, comes a slightly more frantic day to day; but I wanted to pop in quickly to share this sweet potato smoothie recipe.
The other night as I was greedily eating a bowl of steamed sweet potato, out of nowhere I said aloud “I need to start putting sweet potato in smoothies”. No one was around to hear, but I knew I had to follow through on this one.
A sweet potato smoothie is akin to a sippable sweet potato pie; but much healthier. Now, you may be inclined to think that a sweet potato smoothie will spike your blood sugar, and if this was a sweet potato juice, it certainly would; but since we blended the whole sweet potato into this smoothie, the fiber helps to deliver all the nutrients to the body without the sugar spike- there’s also some cinnamon, with it’s blood stabilizing benefits, thrown in for good measure. But as caveat, if you struggle with high blood sugar or diabetes, please use your discretion when it comes to this sweet potato smoothie.
This sweet potato smoothie is eerily deceiving, as it sips like a milkshake; but I assure you, despite what it’s creamy richness would like you to believe, this IS good for you!
Sweet Potato Smoothie
5 oz. cooked then frozen sweet potato**
1/4 tsp cinnamon
1/4 tsp vanilla extract
1 tbsp chia seeds
2 tbsp Greek yogurt (for vegan 1/2 avocado)
3/4 cup almond milk
2 tbsp cold water
**To prepare the sweet potato, dice into cubes and boil for 9 minutes. Drain, place in freezer on parchment paper and freeze completely.
Combine all ingredients in a blender and blend until completely smooth. Enjoy immediately
