It’s well known around these parts that I love smoothies; but I’ll spare you my long winded explanation as to why- we’ve been down that road many times. I want to talk about Greek yogurt.
Every single one of my smoothies contains Greek yogurt; because I like the creaminess it provides. Although I don’t complain, but when someone kindly makes me a smoothie and they neglect to add Greek yogurt, it just isn’t the same. I’ve been known to add Greek yogurt to my boozy smoothies as well; debunking the myth that dairy and alcohol don’t mix. But I warn you, a boozy smoothie made with Greek yogurt and brown cow may yield different results.
Nutrition month wouldn’t be complete without an ode to this ivory colored food stuff; because, straight up, it’s so good for our overall health. There is a saying that goes “healthy stomach means a healthy body”; and if the saying rings true, then Greek yogurt is a must. It has been proven to boost immunity; and it’s no wonder considering the Probiotic Enzymes, which Greek yogurt is renowned for. These said probitics promote helpful bacteria that protect the digestive tract from disease and constipation.
Because Greek yogurt is high in protein, yet low in carbohydrates and sugar, it is an excellent choice for dieters and those looking to build muscle. And an 8oz serving provided nearly 25% of the daily requirement for calcium. The combination of potassium and calcium helps with protein synthesis to create a balanced PH; and a normalized PH level is vital as it aids the blood in carrying oxygen and nutrients to our cells; and helps with nutrient absorption during the digestive process.
So you see why I love the stuff.
Healthy desserts tend to stump people; but when I make dessert I like to highlight simple ingredients. Perhaps it’s because I have never been a huge fan of sweets, but I prefer desserts that are light on the palate and refreshing- this dessert is just that. The combination of lemon zested Greek yogurt with plump and juicy raspberries, organic honey and toasted pistachios is a lovely way finish off any meal!
In fact, this dessert is so healthy you could have it for breakfast- I did!
Lemon Zested Greek Yogurt with Fresh Raspberries
Makes 3 servings
500g plain Greek yogurt
Juice and zest of 2 lemons
2 pints fresh raspberries
½ cup pistachios, chopped and toasted
3 tbsp organic honey
In a blender, combine the yogurt, lemon juice and lemon zest; blend until well combined. Cover and refrigerate for at least 30 minutes.
In a wide bottom cup, divide the lemon yogurt evenly between three cups; add the raspberries. Add the toasted pistachios and drizzle 1 tbsp of honey for each cup; serve.
