Organika Coconut Blueberry Muffins
It happened! My first television appearance went fabulously- the producers were happy, they even invited me back; and most importantly, I was able to extoll the virtues of Coconut to the Vancouver television audience!

Organika Coconut Blueberry Muffins
Makes 12
1 1/3 cup whole wheat pastry flour
1 tsp baking powder
1/2 tsp cinnamon
1/2 tsp baking soda
1/4 tsp cardamom
1/4 tsp ground ginger
1/4 tsp salt
1 large egg
1/2 cup Organika Coconut Palm Sugar
3/4 cup coconut milk
1/2 cup Organika Virgin Coconut Oil
1 tsp vanilla extract
1/2 cup shredded unrefined coconut
1 cup fresh blueberries
Preheat oven to 350 degrees
In a bowl combine the first 7 ingredients together- flour, spiced, baking powder, baking soda. And in a separate bowl combine the warmed coconut oil, coconut milk, egg and palm sugar. Combine the wet and dry ingredients together. Add the coconut and blueberries and scoop the blueberries into a muffin tin, lined with paper cups. Bake the muffins for 20minutes or until an inserted toothpick comes out clean.
