There is a joke that goes: “How do you know someone is a vegan? Don’t worry, they’ll tell you!” I always chuckle when I hear that joke and I find it funny that to this day people think that veganism is some sort of tortuous food affair. Listen when I tell you that today is a great time to be a vegan. No longer are people simply taking non vegan food and trying to mimic it in a vegan fashion- oh no- veganism has become a celebration of the bounty of Mother Nature’s plants.

Now I’m not a vegan, but I endeavor to eat a mostly vegetarian diet while dabbling in veganism; an act born primarily out of work commitments. Testing vegan recipes inevitably means that I eat vegan food on a fairly regular basis. Now yogurt of the dairy variety is huge no-no in the vegan community, because it’s made from cow’s or goat’s milk; and although there are many soy based yogurts out there to satisfy a cream tooth, soy has come under fire for a great many reasons, which I will spare you. So let’s just say vegan yogurt was a hard find, until Yoso Coconut Yogurt.

This weekend I will be at the National Women’s Show on the Cooking Stage demonstrating how to cook with alternatives to sugar, with a focus on coconut sugar benefits.  I will be there at 5:00-5:30pm on Friday evening and 2:15-2:45pm on Saturday afternoon. As Seen In: Metro Vancouver

If you follow me on Instagram, then you know that last Friday (April 20th) I was featured in Metro Vancouver.

Highlight. Of. My. Year- and we’re only four months in, so I’m excited for the next eight months!

This is one of my favorite recipes- hands down; and being given the opportunity to share it with an even larger audience, was a great honor.

It happened! My first television appearance went fabulously- the producers were happy, they even invited me back; and most importantly, I was able to extoll the virtues of Coconut to the Vancouver television audience!

The Culmination

It’s officially the week of CHFA West; the week in which I get to be on TV; the week in which I get to immerse myself in all things health food related; and the week in which all my hard work culminates!

For the past two months I have been working closely with my wonderful partners at Organika Health Products to deliciously debut their newest functional food products; coconut oil, coconut sugar, cherry concentrate and a fiber blend. Now, we’ve become really familiar, so you know very well that I am a part of the coconut tribe; in fact I love coconut so much, that not only is coconut oil my go to cooking oil, but my body moisturizer as well- so, yeah, I love coconut!

I was tasked with creating six recipes using all of Organika’s food products; and initially I was overwhelmed because of all the ideas swirling through my head. However, once I calmed the voices, I got to work on the task at hand. And if you follow me on Instagram, then you’ve likely seen all these dishes before; so, finally, here are the recipes!
