Happy Holidays with Love

Merry Christmas, Happy Hannukah, Joyeux Noel…however you say it, I wish you a very happy holidays. I will be spending the next 10ish days with friends and family reminiscing about the year that has passed; and looking toward 2013.

I will be caroling and ringing in 2013 with this Kombucha Wine Spritzer; which is an exercise in balance. Cheers to a great 2012 and to a prosperous 2013.

Cranberry sauce- the most bastardized of the holiday dishes. Why do I say this, you ask? Well I’ve often wondered why something that is so simple to prepare, would ever need to be convenienced? You know where I’m going with this- canned cranberry sauce- the kind that keeps its cylindrical shape for hours after it has been released from it’ BPA loaded shackles. Ok, so yes, I have very strong opinions about cranberry sauce in can; and, of course, I plan to elaborate.

Can you believe that one week from today it will be Christmas? We’ll have all opened our gifts and preparation for the evening meal will be well under way; although, I must admit, my mind is still focused on tasks that must see their conclusion by the end of the week; to say that I’m busy would be understated. But I know that many of you are beginning to plan your Christmas meal, so I wanted to share this recipe for healthy Christmas stuffing recipe.

Like mashed potatoes, stuffing is synonymous with the Christmas meal; it absence would certainly be noticed. So, although it’s one of the heavier dishes found on the Christmas table, it simply cannot be omitted; however, it can be modified to reflect a healthier perspective. How you ask?

What would a holiday table be without mashed potatoes? Well, I can tell you one thing, without them your gluttonous family members might actually be able to stay awake past dessert! Mashed potatoes of any kind are fixtures on the Christmas buffet, but what if I could give you an alternative that won’t make you snoozy, which will then allow you plenty of time after dinner to play with all your new toys?!

Enter celery root! All the taste benefits of potatoes but without the starchy glycemic load. Read: won’t induce food coma.

Now, when I first saw a celery root I was understandably scared; this thick skinned bulbous root leaves a lot to be desired when it comes to appearance, but underneath the rough skin lies white flesh that is refreshingly crisp with a light herbal flavor; and when mashed it mimics the smooth creaminess of mashed potatoes we have all come to love.
