Boozy Red Berry Fruit Salad

If you hadn’t noticed, I’m currently in a salad phase; and this phase finds itself perfectly timed, as summer is in full swing. This past week on the blog serendipitously turned into an unofficial salad week; I couldn’t help it. Warmer weather makes way for lighter meals, cocktails and later nights than I care to say; but at least there’s salad.

It’s no secret that salad is an amazing way to infuse nutrients into our beings; and, where salads were once after thoughts, today they are celebrated. And this salad is pretty boss if you ask me!

So often when I cruise my local produce section, I pass the mushrooms by without so much as a glance; not because I don’t respect the modest toadstool, but because I become so distracted with the rest of Mother Nature’s bounty. I’m sure many of you are the same.

And while mushrooms have been used medicinally and culinarily in Eastern medicine for ages, most westerners are just now beginning to catch up; as the healing properties of mushrooms are beginning to be demonstrated scientifically. Oh yes, us westerners NEED science to back anything up before we believe.

Fresh Garden Green Salad Recipe

Remember my garden? Well when my gardening cohorts and I walked up to our garden yesterday, you’d think we had forgotten about it. Judging by the amount of weeds we encountered, to outside onlookers, it would have appeared that we had completely abandoned our little patch of flourishing life- but we didn’t; life has an incredible way of foiling even the best laid plans. So after three weeks of little to no tending, we embarked on what would end up being three hours of weeding.

The lesson; don’t be a gardening delinquent. Lesson. Learned.

In any event, our garden is once again presentable; and we are now beginning to enjoy the fruits of our labor! Despite being slightly neglected, our garden gifted us with all the trappings to create the freshest garden salad ever made- well maybe not ever, but you understand my excitement!

I’m not much of a baker, but I do have a penchant for baked goods from time to time; and the thought of not being able to indulge in some of my favorite goodies, strikes fear through my entire being. I can imagine the diagnosis of Celiac, for most, feels like a life sentence in prison with no baked goods.

After an email from a loyal and recently diagnosed reader, who asked me to cover some of the basics of gluten free, I accepted the call of duty. With Celiac disease being one of the most common chronic health disorders in western countries, affecting over 3 million Americans, I would assume that the aforementioned reader is not alone.

So what is Celiac disease? By definition Celiac disease is…

“A disease in which chronic failure to digest food is triggered by hypersensitivity of the small intestine to gluten.”

Which can result in symptoms of intermittent diarrhea, abdominal pain and bloating; and never feeling quite “right”. But now, more than ever, people are becoming more and more proactive in finding ways to live a delicious life despite this diagnosis.

The most important thing to remember when cooking and baking without the use of gluten is that there is no one all purpose flour; instead it’s more of a combination of several to create the desired result. These days one can easily source pre packaged gluten free baking mixes, but honestly, you are paying for the packaging; as they’re generally a combination of flours and starches with xanthan gum for binding power. With that said, some folks find that xanthan gum upsets their digestion, so proceed with caution. In any event, I think it’s far more fun AND bespoke to mix flours to order, customized to the application- I suppose that’s the chef in me. And although initially this method can become quite costly, in the long run, you save…trust me!
